Sausage, Potato & Peppers Healthy Skillet

Ingredients:3 Tablespoons Olive Oil1 Yellow Pepper (diced in 1/2 inch squares)1 Red Pepper (diced in 1/2 inch squares)1 Orange Pepper (diced in 1/2 inch squares)1 1/2 lbs Red Potatoes14oz Chicken Sausage (sliced 1/2 inch thick)Salt, Pepper, Garlic Powder

Instructions: 

  1. Heat 2 tablespoon olive oil in a large skillet over medium/high heat. 
  2. Cut the red potatoes into fourths and add to the skillet, seasoning to taste. 
  3. Cover and reduce heat to low and cook for 20 minutes, shaking and mixing regularly. 
  4. Set the potatoes aside on a plate and add 1 tablespoon olive oil to the skillet over medium heat. 
  5. Add sausage and cook until browned, mixing regularly, but not fully cooked. Add peppers and season to taste. 
  6. Cook, mixing regularly, until sausage is fully cooked and peppers are soft.
