Sausage, Potato & Peppers Healthy Skillet
Ingredients:3 Tablespoons Olive Oil1 Yellow Pepper (diced in 1/2 inch squares)1 Red Pepper (diced in 1/2 inch squares)1 Orange Pepper (diced in 1/2 inch squares)1 1/2 lbs Red Potatoes14oz Chicken Sausage (sliced 1/2 inch thick)Salt, Pepper, Garlic Powder
Instructions:
- Heat 2 tablespoon olive oil in a large skillet over medium/high heat.
- Cut the red potatoes into fourths and add to the skillet, seasoning to taste.
- Cover and reduce heat to low and cook for 20 minutes, shaking and mixing regularly.
- Set the potatoes aside on a plate and add 1 tablespoon olive oil to the skillet over medium heat.
- Add sausage and cook until browned, mixing regularly, but not fully cooked. Add peppers and season to taste.
- Cook, mixing regularly, until sausage is fully cooked and peppers are soft.
